Revitalize Your Kidneys with This Easy and Nutritious Renal Soup Recipe

- 1 lb (450 g) lean beef or chicken, cut into bite-sized pieces

- 1 large onion, diced

- 2 cloves garlic, minced

- 1 medium carrot, diced

- 1 medium stalk celery, diced

- 2 potatoes, peeled and diced

- 2 cups (480 ml) of fresh or canned tomatoes, diced

- 1 cup (240 ml) of beef or chicken broth

- 1 cup (240 ml) of water

- 1 tablespoon (15 ml) of dried basil

- 1 teaspoon (5 ml) of dried oregano

- 1 teaspoon (5 ml) of sea salt

- 1/2 teaspoon (2.5 ml) of ground black pepper

- 1/2 teaspoon (2.5 ml) of dried thyme

- 1/2 teaspoon (2.5 ml) of ground cumin

- 1/2 teaspoon (2.5 ml) of turmeric

- 1/2 teaspoon (2.5 ml) of ground cinnamon

Instructions

1. In a large pot, bring 4 cups (960 ml) of water to a boil. Add the lean beef or chicken and cook for about 5 minutes, or until the water starts to turn cloudy. Drain and rinse the meat under cold water.

2. In the same pot, heat some olive oil over medium heat. Add the diced onion and cook until it becomes translucent, about 5 minutes. Stir in the minced garlic and cook for an additional minute.

3. Add the diced carrot and celery to the pot, and cook for about 5 minutes, or until the vegetables start to soften.

4. Stir in the diced potatoes, fresh or canned tomatoes, beef or chicken broth, and water. Bring the mixture to a boil, then reduce the heat and let it simmer for 20 minutes.

5. Add the dried basil, oregano, sea salt, black pepper, thyme, cumin, turmeric, and cinnamon to the pot. Stir well, then add the cooked meat. Simmer the soup for an additional 20 minutes, or until the potatoes are tender.

6. Taste the soup and adjust the seasoning as needed. If the soup is too thick, you can add a bit more water or broth to reach your desired consistency.

7. Serve the renal soup hot, garnished with fresh basil or parsley, if desired.
